Paleo Banana Bread

Hi everyone!

I am so excited for today's post, because not only is it my first recipe blog post, but it is also a recipe on my favorite baked good... BANANA BREAD. As a kid I always remembered my mom baking banana bread for the family, and it was something I always looked forward to. Banana bread definitely takes me back to my childhood. Since I've been away from home I haven't had banana bread as much lately, and boy have I missed it! I really wanted to bake a loaf, but I wanted to change the recipe up a little bit. I wanted to create a recipe that wouldn't upset my stomach from the dairy or gluten, and would still be just as sweet and delicious!

I give you.. my PALEO BANANA BREAD recipe. This recipe is honestly such a keeper, and it is super easy to make! What I love about this recipe is that there are no added sugars. The sweetness of the bread comes from the bananas itself, and the maple syrup serves as a natural sweetener. Since the paleo flour I am using contains coconut and almond flour, the bread does come out more dense and dry compared to a regular banana bread recipe that uses wheat flour. But, the banana's have so much moisture in them that is balances out the recipe perfectly!

This is a great snack for anyone who is always on the go, or even if you want a healthy alternative to something sweet. I personally love eating it with some almond butter on top, but you could also top it with some honey, butter, or yogurt!

Ingredients:

1 cup of Bob's Red Mill Paleo Flour

2 eggs

2 ripe banana's

2 tablespoon's of Coconut oil (melted)

1/4 cup of real maple syrup

1/2 teaspoons of salt

3/4 teaspoons of baking powder

3/4 teaspoons of baking soda

1 teaspoon of cinnamon

1/4 teaspoon of nutmeg

1 teaspoon of pure vanilla extract

* Although it is not necessary, I used all organic ingredients for my recipe*

Step-by-step directions:

1. Start off by pre-heating your oven to 350 degrees. As your oven is pre-heating prep your pan (I used a 9X5 which is why my recipe came out flatter, but a 7.5 X 3.5 works just as good) with coconut oil.

2. In a bowl, whisk together paleo flour, salt, baking powder, baking soda, cinnamon, and nutmeg.

3. In a separate bowl, mix together eggs, bananas, coconut oil, maple syrup, and pure vanilla extract.

4. Mix the wet ingredients into the dry ingredient bowl. Mix together until completely combined, but be careful to not over mix.

5. Pour the batter into your pan and bake between 45-55 minutes. You can also check to see if it is ready by sticking toothpick in the center and it comes out clean.

6. Let cool for about 20 minutes.
